Who knew drinking cocktails could be so healthy?! This savory sweet frozen daiquiri is the perfect summer drink. Add in a popcorn rimmed glass for a salty treat with each sip.
Makes 2 servings. Ingredients:
1 cup popcorn (Wildcatter’s Choice: Quinn’s Vermont Maple Kettle Corn)
1 tsp simple syrup, for the popcorn rim (Wildcatter’s Choice: DRAM Apothecary Juniper Rose)
2 overripe frozen bananas
½ cup chopped frozen beets
2 oz lime juice
3 oz white rum
To make the popcorn rim:Chop popcorn into bits and place onto a small saucer. Rim the glass with simple syrup, place upside down onto the popcorn saucer, and circle around until the entire rim is coated. Let dry thoroughly before using!
Let bananas and beets thaw slightly while you prepare the rest of the ingredients.
Add bananas, beets, lime juice, and rum into a blender or food processor and mix until smooth.
Tips and tricks:
Chill your glasses beforehand to keep your drink frozen longer!
Beetroot powder can also be used to achieve the same flavor, nutritional content, and color.
